Celtic Salt and freshly ground black pepper
Wooden skewers, soaked in water for 30 minutes
1 cup 100% grass-fed plain Greek yogurt
2 tbsp fresh mint, finely chopped
1 tbsp lemon zest
1 tbsp raw local honey
Celtic Salt to taste
Instructions:
1. In a bowl, combine the ghee, lemon juice, minced garlic, chopped herbs, and a pinch of salt and pepper. Add the chicken chunks to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours.
2. Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked skewers.
3. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.

1. Preheat the grill to medium-high heat.
2. In a small saucepan, melt the butter over low heat. Add the minced garlic and cook gently for 3-4 minutes, allowing the garlic to infuse the butter. Remove from heat and set aside.
3. Place the husked corn directly on the grill and cook for 10-12 minutes, turning occasionally, until the kernels are lightly charred.
4. Using a pastry brush, generously coat each ear of corn with the garlic-infused butter. Season with salt and pepper.
5. Transfer the grilled corn to a platter, sprinkle with chopped cilantro, and serve with lime wedges.
Tropical Fruit Skewers with Whipped Cream
Ingredients:
1 pineapple, peeled, cored, and cut into chunks
1 pint strawberries, hulled
4 kiwis, peeled and cut into chunks
Wooden skewers, soaked in water for 30 minutes
1 cup organic heavy whipping cream
2 tbsp powdered sugar
1 tsp pure vanilla extract
Instructions:
1. Thread the pineapple chunks, strawberries, and kiwi onto the soaked skewers, alternating the fruits to create colorful fruit skewers.
2. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
3. Serve the tropical fruit skewers with a dollop of whipped cream on the side for dipping or drizzling over the fruit.
Decadent Homemade Vanilla Bean Ice Cream
Ingredients:
2 cups organic heavy cream
1 cup organic whole milk
3/4 cup granulated golden sugar
Pinch of Celtic salt
1 vanilla bean, split lengthwise and seeds scraped out
6 large pasture-raised egg yolks
Instructions:
1. In a saucepan, combine the heavy cream, whole milk, half of the sugar, salt, and the scraped vanilla bean and seeds. Heat the mixture over medium heat, stirring occasionally, until it begins to steam.
2. In a separate bowl, whisk together the egg yolks and the remaining sugar until the mixture is pale and slightly thickened.
3. Slowly pour the warm cream mixture into the egg yolks, whisking constantly.
4. Transfer the combined mixture back into the saucepan and cook over low heat, stirring constantly, until the custard coats the back of a spoon and reaches 170°F (77°C).
5. Strain the custard through a fine-mesh sieve into a clean bowl and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
6. Churn the custard in an ice cream maker according to the manufacturer's instructions.
7. Transfer the churned ice cream to a freezer-safe container, cover with parchment paper directly on the surface of the ice cream, and freeze until firm, about 4 hours or overnight.
